20-Minute Chicken Parmesan

Tasty and fast. It's a go-to for busy nights.

8 chicken breast halves
1 egg
1/2 cup bread crumbs
2 Tbsp butter
1 3/4 cup spaghetti sauce
1/2 cup mozzarella cheese
1 Tbsp parmesan cheese
1/4 cup parsley

Remove the skin from the chicken. Slightly beat the eggs, shred the mozzarella cheese, grate the parmesan cheese and chop the parsley.
Using the palm of your hand (or if you prefer a rolling pin with saran wrap over the chicken) flatten the chicken to an even thickness. Dip the chicken into the egg and then into the crumbs to coat it. In a skillet over medium heat, in hot margarine, brown the chicken on both sides. Add the spaghetti sauce.
Reduce the heat. Cover and simmer for 10 minutes. Sprinkle with the cheeses and the parsley.
Cover and simmer for 5 more minutes or until all the cheese is melted.
Serves 4-6

I usually eyeball everything and depending on how thin the chicken is it can take a little more or less time. I always serve it with whole grain pasta and the kids really enjoy it! When I find a picture I will include it in the post. :)
